There was a time during the pandemic when many of Philadelphia’s beloved, small restaurants were closing or struggling. We thought that our city might become a place where only well-financed, glossy outfits could make it.

We were wrong. This was the year that Philadelphia chefs took their livelihoods and their businesses into their own hands. We saw a shift in hours of operation that supported a better work-life balance; a trend toward entrepreneurship; and accolade after accolade bestowed upon the city’s ultra-collaborative hospitality community.

Local chefs have decided to run business their way — and their customers have embraced them for it. At the high end, Friday Saturday Sunday and Ambra went all-in on tasting menus. Casual cafes Honeysuckle Provisions and Gilda brought less-common ingredients and dishes to the forefront. The chef-owners of Tabachoy and El Chingon hung out a shingle to expertly share their native cuisines. And, of course, there’s Kalaya’s big new location, which we sing the praises of just below.

These 10 restaurants defined dining in Philadelphia in 2023, and have us excited for what’s in store next.
