This time, we’re chatting with executive chef Eli Collins of Philadelphia’s a.kitchen+bar. Over the years, Collins has garnered a reputation for creativity and consistency, running the kitchens of beloved neighborhood restaurants like Pub & Kitchen. Since 2017, he’s been living his dream job at a.kitchen+bar creating French-inspired dishes with Mediterranean seasonal flavors and working with High Street Hospitality’s Ellen Yin, a James Beard award-winning restaurateur, to enhance the restaurant’s identity and enrich Rittenhouse Square’s dining scene.

But as any chef knows, squeezing in quality time off with family can be challenging. So, Collins is all about maximizing family-friendly activities — whether it’s winter ski trips or traveling for his kids’ sports matches, grabbing a bowl of Vietnamese soup with his sons, or date nights full of old-school Italian American fare with his wife. When not cooking one of the city’s finest burgers or planning Vine-yl Night’s next wine-focused menu with a.kitchen+bar’s wine director, Frank Kinyon, he fantasizes about a treat yo’self dinner at Her Place Supper Club or finally securing a Resy for his most desired meal at Royal Sushi Omakase. In other words, he’s got his ideal day off already planned out, meal by meal.
