How R&D Cocktail Bar’s Resa Mueller Spends Her Sundays in Fishtown

In this edition, we’re talking to R&D Cocktail Bar manager Resa Mueller, who has not only seen the evolution of Philadelphia’s drinking culture but has also played a significant role in pushing Philadelphia beyond Citywide shot-and-beer specials and more toward expertly crafted cocktails.
At only 39 years old, Mueller is already a hospitality veteran. She was part of the opening teams at Royal Boucherie and Fishtown darling Pizzeria Beddia. She’s consulted on the W Philadelphia’s cocktail menu, was managing director of FringeArt’s annual food gala FEASTIVAL, and even ran a Filipino food stand, called Lalo, at The Bourse Food Hall pre-pandemic. In October 2018, Mueller joined Defined Hospitality, where she quickly went from bartender to bar manager, transitioning the former Root restaurant and wine bar into a new contemporary cocktail bar on bustling Frankford Avenue.
Having lived and worked in Fishtown for several years, she loves that everyone knows each other. And after a long week behind the bar, she just wants to eat and drink where she feels good and comfortable. That means late-night pizzas with an amaro by the fireplace at Wm. Mulherin’s Sons, brunch with friends at LMNO, or a corner dive to enjoy a Cosmopolitan with Campari.
