Smoked Salmon Fried Rice with Everything Spice by Goosefeather



1/4 cup of neutral oil

2 tablespoons shallots, minced             

2 teaspoons garlic, minced            

1 teaspoon ginger, minced                        

2 tablespoons scallions, sliced

4 whole eggs, beaten

1 cup smoked salmon, sliced

3 cups day-old rice                                                                                    

1 tablespoon creme fraiche        

½ lemon, for juicing            

Dill, for garnish


Everything Spice Mix

2 tablespoons toasted white sesame seeds

2 tablespoons poppy seeds

1 teaspoon fried shallots

1 teaspoon fried garlic


Heat a saute pan with a small amount of oil/butter on medium heat, then saute the shallot, garlic, ginger and scallion until translucent. Add the eggs and cook until the eggs are still slightly runny. At this point add the smoked salmon. Mix with the eggs and continue cooking until the eggs are fully cooked. Add the rice and cook for five minutes, stirring and heating the mixture to break up any clumps. 

Place the rice into bowls and finish each one with a spoon of creme fraiche and 2 teaspoons of the Everything Spice Mix. Top with fresh lemon juice and dill.
