Chef Virgilio Martínez is the owner of Central in Peru, considered one of the best restaurants by The World’s 50 Best Restaurants. Martínez is inspired by his insatiable curiosity and passion for the biodiversity of his land. Chef Pía León helmed the kitchen and co- owned Central with her husband Martínez for a decade before she branched out with her own venture in 2018, Kjolle. That same year, León was voted “Latin America’s Best Female Chef” by Latin America’s 50 Best Restaurants.

Under his leadership, Gramercy Tavern has earned three stars from the New York Times and the James Beard Award for “Outstanding Restaurant.” Anthony has won James Beard Awards for “Best Chef: New York City” as well as “Outstanding Chef.”

Chef James Kent is the Executive Chef of Crown Shy, the Michelin- starred restaurant he opened in 2019 inspired by his upbringing in downtown NYC and culinary experience leading some of the world’s most celebrated kitchens. Under his leadership, The NoMad received a Michelin star, and famed restaurant Eleven Madison Park received four stars from The New York Times and one of the World’s 50 Best Restaurants, among others. In 2010, Kent placed first in the Bocuse d’Or USA competition and tenth in the world in the international finals the following year.

Silverton’s restaurant cheese vendor, Mimmo Bruno from Di Stefano Cheese, will join to show you how to create homemade mozzarella, while Silverton will create her signature condimenti to complement the cheese. The demonstration will be followed by a Q&A.

Nancy Silverton is co-owner of Osteria Mozza, Pizzeria Mozza, and chi SPACCA in Los Angeles. The centerpiece of Osteria Mozza is a Mozzarella Bar where Silverton composes small dishes featuring fresh mozzarella and burrata. In 2017, Silverton was profiled in an episode of Netflix’s award-winning docu-series, Chef’s Table.

Chef Noel first joined Union Square Hospitality Group in 2014 at Maialino, where she discovered her passion for cooking distinctly Roman cuisine and the art of using seasonally focused ingredients. In 2018, she joined the opening team of Manhatta as the Executive Sous Chef, and later in 2019, she became the opening Executive Chef of Maialino Mare in Washington D.C. Noel has returned to NYC to lead the kitchen at Union Square Hospitality Group’s flagship restaurant Union Square Cafe as acting Executive Chef.

Chef Dominique Crenn is the co-owner/Chef of renowned San Francisco restaurant, Atelier Crenn. Driven by her passion to create a deeply personal project, Crenn opened Atelier Crenn where she could express her heritage as well as an ode to “poetic culinarian.” In 2018, Crenn became the first female chef in the US to receive three Michelin Stars. Crenn recently published her critically acclaimed memoir, Rebel Chef, and continues to be an outspoken member of the international culinary community, promoting innovation, sustainability, and equality.
