Welcome to another edition of The Order, preparing you to feast like a pro at all of the best restaurants in the Miami.

Glitz is out. Organic-glam is in. Case in point: MiMo newcomer Pinch Kitchen, which is garnering all the buzz without all the fuss thanks to its inviting interiors, hearty food and refreshingly new Miami attitude. The chefs-owners, John Gallo and Rene Reyes, earned their cooking chops at swanktowns like Pubbelly and Casa Tua before coming down to earth at Pinch, which explains why the food is so damn good.

As for the order? You’ll have the…

Start With:

Endive Salad – Grilled endives? It’s a thing. And what’s there not to like? Since this variation is topped creamy fonduta, salty speck and crunchy apples. Yes please.

Mussels — It’s just a fact of life that andouille sausage and mussels are supposed to co-exist in beautiful flavor harmony, and these are no different. And don’t forget to soak up that broth with an extra order of focaccia bread.

Then Do The:

Duroc Pork Secreto— The secret is out, literally, with this dish. Using the “secret” cut of pork that only experts know about, you’re in for a flavor explosion making you wonder why you were in the dark for so long. Oh, and that mashed potato cup is money, and it doesn’t even know it.

Roasted Organic Carrots— You say you hate carrots? Try these and tell us if you still feel the same way (Hint: you won’t.)

And For Dessert:

Baba aux Rhum — If you only have one dish at Pinch, do yourself a favor and skip right to dessert. This classic rum cake with a side of earthy thyme gelato is the stuff dreams are made of.

Have a Bottle Of:

Beer — Any and all kinds are available here and rotate frequently. From hard-to-find Belgian ales like Piraat Triple Hop to the limited edition Hitachino White Ale, Pinch’s beer selection turn even the biggest wine-o into a beer nerd for the night.
