Resy, in partnership with American Express, is delighted to offer a series of limited-seating and socially-distant dining experiences exclusively for American Express Card Members, as part of Season Two of Chef in Residence at Stone Barns, a program of Stone Barns Center®, in association with Global Dining Collection Chef Dan Barber’s Blue Hill Restaurant.


Event Details:

On Sunday, August 1, Global Dining Access Members will receive exclusive 48-hour early access to reservations for Chef Pam Yung’s residency. Eligible card must be on file to unlock early access. Terms Apply.

On Tuesday, August 3, reservations will open up to all American Express Card Members via Resy. Terms Apply.


About the In-Person Dining Experiences:

Your ticket includes admission to the property, an outdoor large format menu or an indoor tasting menu and matched beverages created with a unique culinary perspective by each Chef in Residence. In addition to the specially curated dinners, Card Members will receive a signed menu and special gift upon departure.

About the Chefs-in-Residence:

CHEF BRYAN FURMAN

Celebrated for his signature-style pit smoked barbeque, chicken, brisket and ribs, Pitmaster Bryan Furman was named one of Food & Wine Magazine’s 2019 Best New Chefs (the first Pitmaster to ever receive the title), and James Beard Foundation semi-finalist nomination for Best Chef Southeast 2019 and 2020. Once a welder by day, Bryan transitioned a thriving catering business into becoming the pitmaster at one of the hottest restaurants in the Southeast (Atlanta, Georgia) B’s Cracklin’ BBQ. Bryan has been working diligently to open two brand new Atlanta locations, as Bryan Furman BBQ. During his Stone Barns residency, Pitmaster Bryan will focus on heritage hog breeds, selection of woods for smoking, and fresh side dishes using Hudson Valley produce.

 

CHEF JORGE VALLEJO

Jorge Vallejo is chef and owner of Quintonil in Mexico City, named one of the World’s 50 Best restaurants, and an alumni of some of the world’s most respected restaurants, including Noma, Pujol and the St. Regis Hotel’s Diana Restaurant. Chef Jorge will apply Mexican traditions and techniques to the early summer bounty of the Stone Barns farms and Hudson Valley.

 

CHEF JONATHAN TAM

Canadian chef Jonathan Tam trained at Noma and was Head Chef at Relae, where he gained a deep understanding of seasonality to develop a creative vegetable forward cuisine. Later this summer, Jonathan will embark on his next chapter, opening restaurant JATAK in Copenhagen. Before then, he will use his residency at Stone Barns to look at traditional Chinese technique and Cantonese heritage, reinvented with new knowledge and reinterpreted with Hudson Valley ingredients

 

CHEF ADRIENNE CHEATHAM

New York-based Chef Adrienne Cheatham spent 8 years at Le Bernardin and was executive chef at Red Rooster Harlem. She’s the founder of SundayBest, a pop-up dinner concept where she highlights the subtleties, nuance and less-known facets of Soul Food and Southern cuisine, and is currently working on her first cookbook. Chef Adrienne will use the Hudson Valley as a lens to explore how Southern and Soul Food have evolved through time with the integration of ingredients and techniques from various cultures.

 

CHEF PAM YUNG

Currently based in London at Flor (more low-key sister of famed Lyle’s) and ASAP Pizza, Chef Pam Yung has honed her passion for pastry and baking across the globe: beginning in New York at Will Goldfarb’s Room 4 Dessert, and later at El Celler de Can Roca in Spain and In de Wulf in Belgium. In 2014, she and her then-partner opened a vegetable-forward chef’s counter in Brooklyn called Semilla, and it was there that her grain-focused baking and innovative desserts became its signature, earning them a Michelin Star. Chef Pam will close out the second season of Chef in Residence with a late summer pizza experience, emphasizing freshly-milled whole grain doughs, handmade cheeses, charcuterie and ferments, and seasonal toppings sourced from the surrounding farm.


About the Program:

In 2021, Blue Hill at Stone Barns has transformed into Chef in Residence at Stone Barns, a program of Stone Barns Center. During their limited time residencies, visiting chefs will collaborate with Stone Barns farmers and Blue Hill cooks to present a menu that interprets and reimagines the farm–and the landscape of the Hudson Valley–through the lens of their own cuisine and personal history. This season, there will be a mix between outdoor large-format events and indoor tasting menu experiences that all focus on the art of homestyle cooking

In the event that a participating restaurant must cancel its packages due to a government required COVID-19 shutdown, Card Members will be refunded the full purchase price of the package(s) purchased. Global Dining Access:

The Global Dining Access program (“GDA”) is a benefit available to eligible Card Members. “Eligible Card Members” are account holders of Platinum Card® or Centurion® Card from American Express, Business Platinum Card®, Business Centurion® Card from American Express, Corporate Platinum Card® or Corporate Centurion® Card from American Express, Delta SkyMiles® Reserve American Express Card, Delta SkyMiles® Reserve Business American Express Card, and Hilton Honors American Express Aspire Card (and any Additional Card Member(s) on their accounts).
