Hillary is an award-winning restaurateur and journalist whose writing has appeared in Food & Wine, The Wall Street Journal, Los Angeles Times, Bon Appétit, VICE, Eater, Travel + Leisure, and many others. A classically trained chef-turned-front-of-house vet, her restaurants have been awarded by 50 Best Discovery, Food & Wine’s 10 Best Restaurants in the World, and Condé Nast Traveler’s yearly Hot List. Most recently, she’s worked on culinary research for Noma’s Los Angeles pop-up. When not working in or writing about restaurants, she’s probably writing poetry or going on a walk by herself, somewhere very quiet in the middle of nature’s nowhere.

    My parents were Birkenstock-wearing vegans, so I grew up meat-free and will always remember the first time I ordered a steak. I was 13 and angry with them while out at Olive Garden and knew this was the way to cut them deep. Despite the quality of the steak, I never looked back.
  • Last meal on earth
    It’s tied between Asador Etxebarri and anything my chef-husband Ed Verner makes when he’s not too tired from cooking for other people.
