Momentum doesn’t even quite capture what’s going on in restaurants as we move into fall. No matter which city you’re in, tables are filling up even more than they did a few months ago, new openings come with every blink of an eye, and despite whatever else is happening — inflation, anyone? — it feels surprisingly like the balance of the dining universe is almost restored to 2019 levels, maybe even beyond.

If anything has changed, it’s the triumph of actual fun at the table, as we discussed this summer. So yes, pizza. And yes, more pasta please. And yes, chicken and waffles and lechon and margaritas and more. This is why our list of defining American restaurants this fall leans heavily toward food we crave. Even tasting menus have shifted, to be less a procession of chefly wonders and more built around nostalgia and pleasure and, dare we say, hunger.
