For starters, there’s the expansion of a popular hidden tiki bar to Highland Park, the addition of a famed hibachi chain to the platform (we live for an onion volcano), plus look out for a famed Southern chef’s L.A. debut (also on this month’s Hit List).

“Top Chef” star Amar Santana’s long-running Costa Mesa Spanish-inspired concept is now bringing the flavors of Barcelona to DTLA. Blending classic taperia with rustic steakhouse, Vaca celebrates all things Spain with a selection of paellas, a legit jamon program, and cocktails featuring beloved staples like G&Ts and Spanish vermouths. Wash down a grilled skirt steak and pan con tomate with a dessert-inspired Midnight Cacaoboy (vermut de vaca, rye whiskey, Campari, coffee bean and cacao butter, and chocolate-walnut bitters).
Kali Central
Just a stone’s throw from Larchmont and the buzzy Melrose Hill area, Kali recently pivoted from tasting menu, fine dining concept to vintage-inspired steakhouse. Chef Kevin Meehan places the emphasis now on expertly sourced steaks, classic sides, and a martini‑forward bar. Crowd-pleasing dishes like beef tartare, a California wedge salad, Parker House rolls, and mushroom risotto set the tone for an indulgent night out with friends. The new design embraces mid‑century Hollywood glamour, appropriate given its proximity to Paramount Studios.

WeHo’s favorite speakeasy-inspired tropical bar is sailing eastward for its second location, located inside Highland Park Bowl. Look for the “Salty Sailor” to the left of the entrance to locate the intercom that will grant you entrance to this nautically-themed cocktail bar. Known for theatrical cocktail presentations, the latest outpost features takes on classics like a Tropical Old Fashioned (served out of a smoking red box) with new ones like the Swizzle Me Timbers alongside bites like Hawaiian pizza.

The former Bernee space, still standing after the devastating Eaton fire ravaged Altadena, has been reborn as Betsy from chef-owner Tyler Wells (also of All Time). You’ll feel the warmth upon entering as the live-fire hearth burns gently behind the bar that’s stocked with natural wines. The local seasonal menu changes frequently, but you don’t want to miss any of the wood-fired meats, the tomatoes and burrata, or the Basque cheesecake for dessert.

Former aspiring surfer-turned-chef Craig Hopson is behind this California-kissed French-Australian neighborhood bistro. After working at storied kitchens around the world including Guy Savoy and Le Cirque, Hopson flexes his French training in dishes like steak au poivre while also nodding to his Perth hometown in sides like electric fries with chicken salt (a favorite Aussie condiment). There’s also a $59 four-course tasting menu, best enjoyed on their dog-friendly patio.
