Because Matt Hyland has done it again. Having added Rhode Island-style grilled pies to his repertoire at Violet, it seems that there’s no style the modern pizzaiolo can’t master. His creativity here extends beyond pizza, too—think stuffed clams (with linguica, pretzels, and uni) and pork-and-duck tortellini in dashi brodo with Sichuan oil.
