As if a 100-year old Parisian bistro has been copied and pasted on to 14th Street — complete with worn-in wood floors, inviting leather booths, mountains of fresh bread, and an invigorating din of conversation.

Silverman is the brains behind the New American prix-fixe destination — one that reads like a self-guided tour to the dishes you’ve dreamed of.

Dreamt up by industry vets Keem Hughley and executive chef Toya Henry, this one-of-a-kind Afrofuturistic experience launches guests into new dimensions, pulling from a breadth of ancestral influences from the Caribbean, Ghana, South Africa, and beyond.

A fantastical concept that explores the past, present, and — most vividly — the future of cuisine from the African Diaspora, set within a sprawling three-story space.

Henry’s fare is steeped in a Caribbean tradition that favors ground spices and herbs but tweaked for modernized palates — from the bush-smoked snapper to the braised oxtail with pappardelle.

A deep-dive into the plot: the restaurant follows the 700-year story of fictional spice trader and world traveler Alonzo Bronze, as he charts new courses through an intergalactic, gastronomical future.

Another standout in the Starr Group portfolio, St. Anselm’s displays a self-described devotion to grilled meats, one that faithfully telegraphs the vibe of the Brooklyn original. Although the team’s passion peaks with a perfectly cooked steak, there are plenty of unexpected surprises in store.

The Vibe

A flawless yet unpretentious celebration of all things cooked on an open flame.

Can’t Miss

With a menu that helps direct your portion sizes (“Smalls From the Grill” and “Bigs From the Grill”), a number of items deserve attention — the thick-cut bacon is a solid place to start. Depending on how many companions you’re dining with, consider populating the table with more robust offerings like the charred bobo chicken or ax-handle rib eye.

One of the unexpected delights at St. Anselm is the extensive collection of rare Madeira, with an ode to the historical figures who were also huge fans. If you’re so inclined, sample the team’s private label and bring a bottle home with you.

Tysons Galleria

It takes a certain level of confidence to build a 10,000-square-foot dining mecca — let alone to drop one in a suburban shopping center. But if anyone is up for the challenge, it’s chef Pepe Moncayo of Cranes Spanish Kaiseki. Surprising to no one familiar with Moncayo’s craft, Jiwa Singapura has immediate staying power. The elegant interpretation of Singaporean street food has what it takes to draw even the most fervent of D.C. city-dwellers to the outer edges of their metropolitan limits. No regrets, just chili crab.

The Vibe

A far departure from the emotions that typical “mall food” typically conjures, this boldly flavored “soul of Singapore” is presented on a meticulously polished pedestal, in an expansive space within Tyson’s Galleria.

Can’t Miss

Order right, and you’ll be transported to the annals of Moncayo’s nostalgia. Start with the chicken satay with lemongrass and ginger while you secure group buy-in for, as mentioned, the snow crab with chili sauce. It won’t be a hard sell.

Well-versed D.C. diners have enjoyed the fusion of Spanish and Japanese cultures that Barcelona native Moncayo brings to his menu at Cranes. This is a whole new side, thanks in large part to his wife Aishah, a Singapore native, which explains the tuned-up renditions of classics like Hainan chicken rice and Hokkien mee.

Named after a social club dating back to the 1930s, Kirby Club celebrates a rich Lebanese family heritage. Co-founders Rose Previte and Mike Schuster (Maydān and Compass Rose) douse every diner with an experience that’s steeped in Middle Eastern flavor and convivial state of mind — with a rich wine list to round things out. Here you can split, share, and devour plates of all sizes amid a kaleidoscope of ’70s-inspired décor.

A family-style frenzy that feels like it’s been orchestrated by your own Lebanese grandmother.

When a restaurant is “brought to you by the United People of Kebab,” you set your aim. If you’ve come with a hungry crew, the Kebab Shindig will get you a hearty sampling of favorites such as kofta, Aleppo spiced steak, and oyster mushroom. Keep the sauces coming.

The original members hailed from Lebanese village Kherbet Khanafar, but opted to shorten the club’s name to “Kirby” as a symbolic act of assimilation and the embracing of a new American culture.

With their enduring affection for the nation of Georgia, Supra co-owners Jonathan and Laura Nelms shine a high-wattage spotlight on a cuisine worth celebrating. This Shaw District restaurant primes guests for revelry with a robust menu of traditional, highly shareable fare and an impressive selection from one of the world’s oldest wine regions. Sprinkle in charming design elements like a commissioned mural from Georgian street artist Gagosh and an artful arrangement of hanging wool hats, and you’ve got yourself an ambiance to remember.

A jovial celebration of innovation, tradition, and abundance from a country that knows how to do just that.

Can’t Miss

The most recognizable—and enticing—dishes will be the cheesy, buttery khachapuri (stuffed bread) or the bursting-at-the-seams khinkali (soup dumplings), but these are just the tip of the iceberg when it comes to planning your feast. Robust plates such as the roasted duck with blackberry and cilantro sauces or the housemade sausages are how to round things out.

A traditional Georgian supra involves a formal raising of the glass from a tamada, the official toastmaster (a new entry on the list of dream jobs).

Mt. Pleasant

Like so many thankfully now-thriving concepts that popped up in the last few years, Martha Dear was originally a pizzeria project intended for takeout only. Neapolitan pies were cranked out — and sold out — daily in a basement-level operation in Mount Pleasant with such overwhelming popularity that the husband-and-wife team, Demetri Mechelis and Tara Smith (formerly of Tail Up Goat), were destined to expand. While the menu centers around the naturally leavened pizzas, the duo also punctuates the palate with quintessentially Hellenic sides.

The Vibe

A snug, brick-lined marriage between a pizzeria and a Greek taverna.

Can’t Miss

Praise for the red sausage and pepper pie (amped up with a bit of Calabrian chiles and spreadable pork ‘nduja) can be heard from all corners of the DMV. White pies are decorated with smattering of Greek cheeses like halloumi and a nutty kefalograviera. If you want to cement your connoisseur status, don’t skip the pizza “finishings” that can be drizzled over the top or used for dunking extra crust.

The tangy sourdough crust you’ll be savoring comes from Mechelis’ own starter, which he has carefully tended for the last few years.

Husband-and-wife team Yuan and Carey Tang have nearly perfected the art of four-course dining with their prix-fixe menu — one whose culinary inspirations wander across Asia, with a mind to presenting a uniquely New American prism on flavor. The customizable menu is always market-driven, with seasonality and border-defying homages front and center.

An approachable tasting experience with a side of wanderlust.

Can’t Miss

Yes, you can dig into a beautifully deconstructed bánh mi that features Nueske’s bacon and foie gras, but also let it be known that this team has an impressive command over produce. Exhibit A: the slow-roasted and grilled Carolina BBQ carrots, which get a certifiably carnivorous treatment.

It could be argued that Rooster & Owl’s propensity to rebuff any finite categorizations can be attributed to chef Yuan Tang’s multi-faced career transformation, which was rounded out by catering gigs, Uber-driving shifts. and stints under fine-dining legends like Jean Georges.
