November marks the start of oyster season in Texas, and in the Bayou City, the beautiful bivalves are served in a variety of ways that reflect Houston’s diverse cuisines — presented plump and raw on the half-shell with a spicy mignonette, charbroiled with cheese to bubbly perfection, and deep fried and stuffed in a po’ boy, among other types of preparations — each one oh so tasty.
