The Corson Building, Copine, The Mountaineering Club, Now on the Resy Hit List

Because elegance lives here. Located in the unassuming Georgetown neighborhood, the Corson Building makes you feel like you’ve been transported to a turn-of-the-century secret garden. Rustic communal tables grace both the 1910 stone mason’s cottage and the courtyard, and seasonal American dishes are served family-style, making for a truly special dining experience.

Because named for the French for “pal” or “girlfriend,” Copine is the perfect place to enjoy a meal with that special someone. Serving American food executed with French technique, the restaurant beckons diners to enjoy dishes such as Valley Farms rabbit, comprised of confit leg, bacon-wrapped loin, caraway-scented spätzle, carrots, and maple-bourbon sauce, and a wagyu beef ribeye served with purple potatoes, wild leeks, nettles, king trumpet bordelaise. 

Because just shy of two months old, The Mountaineering Club has earned positive reviews for its sweeping views, on-theme cocktails, and inspired fare. Expect seafood dishes ranging from raw oysters and clam chowder, to Loki salmon with avocado smear and toast, to a seafood boil. Pro-tip: save room for the s’mores.

Because you know it must be good if the brother owners are behind two Seattle institutions, DeLuxe and the Athenian. Brunswick & Hunt offers a more upscale ambience and menu, and dubs itself “farm-to-neighborhood.” The centerpiece of the restaurant, an antique wooden bar from Winlock, Wash., gives off old-timey vibes. Order a drink like The Judge or The Watchmaker to wash down wholesome dishes like buttermilk gnocchi with cabbage, maitake, capers and parmesan; and Brunswick fried chicken with mashed potatoes, collard greens and dijon cream.

Because in a city with few Malaysian and Indonesian options, Kedhai Mekhan delivers. Be prepared to wait, but for dishes like Roti Jala (a malaysian net bread made with wheat flour, tumeric and egg and served with either lamb or dhal curry) and Nasi Goreng (a Malaysian-style fried rice with kecap manis, bean sprouts and a fried runny egg), it’s worth it.

With a menu spanning congee, customizable noodle soups, and stone pot rice, rice rolls are the favorite here. Don’t miss out on the expansive dessert menu or a mango smoothie with coconut milk and sago.

Focused around a wood-fired hearth, the kitchen serves many dishes that are touched by the fire; among them, fire-roasted olives served with wheat crackers, mint and fennel, and charred mangalitsa pork served with buttered cabbage and pork broth. Round your meal out with a glass of biodynamic wine.

Because deep-dish pizza goes perfectly with live entertainment. The younger sibling of Windy City Pie, located in the music venue Clockout Lounge, Breezy Town makes a deep dish pizza with sourdough crust and cheese that bakes out to the edge in crispy, almost-burnt flakes. Owner Dave Lichterman says that the pizza here doesn’t subscribe to being Chicago- or Detroit-style, specifically, but is his own creation that takes inspiration from both; it’s a Midwestern pan pizza.

Serving only pho—17 different kinds—this reliably consistent institution is a great option for a quick stop over a snack or full meal. Service is no-nonsense and fast, and the complimentary cream puffs are a well-known perk.
