The Paris Hit List, Spring 2022 Edition: Tawlet, Café de Luce, Le Mary Celeste, and More

After a bumpy end of 2021 and a slow kickoff to 2022, Paris is humming once again. The old favorites, from Balagan to Le Mary Celeste, are packed with regulars while an exciting crop of new bistros, bars, and canteens with wildly different influences are drawing curious crowds. Perhaps most refreshing of all is a renewed sense of energy and enthusiasm among chefs and restaurant workers as they begin to sense the end of the COVID tunnel, or at the very least, an end to the worst of it.
