This unique omakase curation by chef Niki Vongthong, an Uchi veteran, continues to be one of the hottest tickets in town. Those fortunate (and quick) enough to score a resy at this intimate chef’s counter are treated to a 15-course tasting menu with high-quality, seasonal ingredients that have included A5 wagyu, young sea bream, firefly squid, and more — all flown in twice weekly from Japan and other places, and inspired by Vongthong’s global travels as well as her Thai roots. One highlight worth the splurge: an 11-day dry-aged tuna series featuring perfect bites in varying degrees of fattiness — akami, chutoro, and otoro.
