Renowned for its refined, inventive Italian fare, husband-and-wife owners David and Jennifer Uygur have created one of the city’s most beloved restaurants. Pastas are made by hand each day and meats are cured in-house, while a list of Italian-leaning wines brims with generosity.

Located on the edge of Highland Park in Dallas, Nonna plates up inventive Italian dishes with a focus on local and organic produce. Many dishes are kissed by a roaring wood-burning oven (which also turns out immaculately charred pizzas), while a rotating list of pastas and antipasti keeps regulars and newcomers alike on their toes.

Austin

An early adopter of the farm-to-table ethos in Austin, Odd Duck’s menu reads like a diary of its chef’s travels while rooting itself firmly in Texas. Dishes are designed to be shared, and diners can expect anything from an antelope tostada or cast-iron cheddar cornbread to stuffed quail with masa and salsa verde. The dining room is as energizing as it gets, while the best seats are at the bar to watch the chefs at work.

At this East Austin institution, almost everything is sourced from within the Lone Star state, which chef Janie Ramirez transforms into classic Southern dishes with a twist. Take a seat inside its farmhouse-inspired dining room and feast on dishes prepared in the kitchen’s wood-fired oven, like chicken hearts with spicy cherry glaze or a fortifying plates of biscuits and gravy with a breakfast sausage made from antelope that the restaurant’s chefs broke down earlier in the week.

Houston

This sleek Vietnamese restaurant in Autry Park may tout French influences, but is delightfully grounded in the flavors of the Southeast Asian nation. Creative touches punctutate an intimate meal here, from crispy bánh xèo bites and a steamed branzino which comes wrapped in banana leaf and is theatrically served tableside.

This isn’t your typical Indian restaurant — or your typical Portuguese one, either — and that’s what makes Da Gama special. Here, husband-and-wife restaurateurs Shiva and Rick Di Virgilio feature the dishes of former Portuguese colonies in India and East Africa, and the culture-blending results (see the Goan fish curry) are vivid and delicious.
