Perfectly ripe stone fruit and salty ham are topped with burrata and herbs, while juicy tomatoes are given the opportunity to soak deeply into olive oil-toasted bread. The oysters, which hail from Washington to North Carolina and beyond, are icy always cold, and ideally paired with a Gibson garnished with a pickled plum.
