New On Resy: Portland’s Newest Restaurant Openings

Chef Timothy Wastell is fresh off a James Beard win for Best Chef: Northwest and Pacific, and brings joyfully simple vegetable-focused cooking to the menu. The options here have a touch of European flair: herbed frites with preserved lemon mayo, sprouting broccoli with anchovy, and green garlic and ricotta cavatelli with local mushrooms.

New from Lulu and Silk Road owners Vijay Kumar and Gilbert Leon comes Pretty Ugly, the duo’s burgers-meets-fancy-cocktail bar in Northwest Portland. The meat-focused menu (though a few vegan options remain) centers on more than half a dozen burgers — made with dry-aged prime beef from local butcher Revel Meat Co. — alongside creative cocktails ranging from “produce-driven, modern signatures” to “vintage desserts” to pair with your burger of the night.

Taking over the former home of Champagne-centric Fancy Baby in Northwest Portland, Il Corso is trading hard-to-find bubbles for pasta and Italian wines. Find imported meats and cheeses, snack plates like Calabrian chile-spiked tuna carpaccio, and a short but sweet menu of handmade pastas from chef Brady Stephens (of OK Omens and Scotch Lodge). In addition to classic Italian varietals, sip aperitifs from the lengthy amaro menu, a low ABV spritz, or a cocktail shaken by Scotch Lodge alum Lisa Talbert.

On the ground floor sits Bistro Alder, the hotel’s casual Pacific Northwest restaurant serving breakfast, lunch, dinner, and happy hour, with a full list of craft cocktails, wine, and beer to pair, all day, every day.
