Here’s What It Takes to Create a Single Day of Magic at Mandolin

Since opening in 2009, Mandolin has evolved into a Miami institution. There are plenty of reasons to fall in love with it, whether it’s the bougainvillea-lined patio that transforms into an oasis of flickering lanterns at night; the farm-to-table cooking grounded in its founders’ Greek and Turkish backgrounds; or the community that comes with breaking bread with a cross-section of the city, from families and dates, locals and out-of-towners, Old Miami and new, all in a neighborhood that has evolved alongside the restaurant.

Over the past 15 years, Mandolin has created plenty of special experiences for Miamians. We wanted to peek beneath the hood, so we sent photographer and Miami native Felipe Cuevas to capture and tell the story of the many hands, faces, and personalities that create the magic that has people lining up, come rain or shine. Here’s just one day in the life of the restaurant that has delivered a benchmark in hospitality for so many of the past 15 years, from when the first staff members arrived, to the moment the last light was switched off. Here’s to 15 more.

7 a.m. "It was the calm before the storm. This image of the quiet on the street in the Buena Vista neighborhood takes me back to when Mandolin first opened. Back then, the street wasn’t urbanized, there was no parking. Your car was literally in a ditch."

8 a.m. "When the produce comes in, everyone's having coffee and it’s so exciting when it all arrives. The restaurant also works closely with local farmers, who can grow as much as 80% of their crop for the restaurant."

8:14 a.m. "I’ve never been to a kitchen where the chef wasn’t the main character. I don’t want to say it’s not a chef-driven kitchen. But here, it’s staff-driven, and everyone is as important as the chef."

8:34 a.m. "This is Chef de Cuisine Robbie portioning fish for one of the specials that day. Everyone at their station was so focused on their speciality. Everything was happening simultaneously, and I couldn’t believe how quickly they pulled it off. Everything was ready in 3 hours."

9:16 a.m. "Roxana, who is the restaurant's carpenter, and her husband Dio, they do everything themselves. Along with the front and back of house, there's a microcommunity at Mandolin that's constantly keeping everything in order. Sanding, painting, growing, making throughout the week. I’ve never seen this in a restaurant."

9:45 a.m. "In Europe, fire is common. It’s a common ingredient there, but in Miami, less so. [Mandolin owners Ahmet Erkaya and Anastasia Koutsioukis] are Turkish and Greek, so it’s their tradition — you can taste it in each dish. The heat needs to be kept constant, which requires a team to maintain it throughout the day. That's a massive undertaking in itself."

10:17 a.m. "The bread! They make it fresh each day. I had at least four. The restaurant's culinary teams bake nearly 1,000 loaves of Ramadan pide each day, which are served complimentary at each table. The co-founder Ahmet [Erkaya] chose Ramadan pide simply because it was his favorite bread growing up, but he could only have it during Ramadan. So when he had the opportunity to create the bread service for Mandolin, he felt as if he had no choice but to make Ramadan pide."

10:45 a.m. "I went outside and everyone was unstacking chairs on the patio. There’s not one better person than the other here, I noticed that. It’s a beautiful community. Everyone was very precise and very focused."

11 a.m. "When I walked in I recognized Jackie, one of Mandolin's longtime servers. I said, 'You look so familiar — I’ve been coming here for 13, 14 years.' She recognized my kids and commented that they were so big now. She’s seen a lot of families growing up. That was a special moment. A lot of the team has been with the restaurant for a long time, which is a good sign and it's also meaningful for regulars."

11:33 a.m. "At the staff briefing, chef Robbie was taking the front of house team through a tasting of the day's specials. The team was very switched on and super motivated. That day, they had an amazing pide with cheese and egg yolk, a fish stew with wahoo and oregano, and a flourless chocolate cake with yoghurt. Everyone was very well educated on the food and the restaurant’s history, and what they wanted to accomplish. And the level of excitement they had – they were nominated for best restaurant recently – they wanted to keep that momentum going."

12:01 p.m. "There's an air of excitement as the first guests start arriving. Everyone was so excited coming in because they had managed to secure a table. They made it to the promised land!"

12:25 p.m. "The details of the dishes caught my attention, and how beautifully presented each plate is. Their dip platters are a staple, and one of my favorite dishes."

12:35 p.m. "In the blink of an eye, the dining room was full. The vibe at Mandolin is like you’re at someone’s home, as if you’re going to your family’s house at the weekend. You have the regulars, the tourists, first timers, out-of-towners. And people will ask what the next table is having, and tables will chat between themselves. It’s beautiful. You don’t get that much in Miami."

1:19 p.m. "At that moment, it was very busy. There was food moving everywhere, at that speed."

1:52 p.m. "When [Mandolin co-founder] Anastasia showed up, she was very discreet. Everyone hugged her and talked to her and she took the time to chat with them. She’s handed down duties to managers — all with confidence. They’re so fine-tuned that they trust that their team are capable. I know people who started from nothing who grew to be as successful as Mandolin, but burned out because they couldn’t find a team to steer the ship when they weren’t at the restaurant."

2.12 p.m. "I've been going to the restaurant since it opened, my family and I were regulars. I remember Anastasia there back in the early days, greeting customers as they came in, so I asked her if we could take the shot outside. It was like we were going back in time."

2:35 p.m. "I love the detail of the menu — people don’t walk in Miami as much, so having it there hanging is such a beautiful little touch that’s welcoming to people passing by. But the restaurant only waits 15 minutes for each reservation and some don't always make it. So don’t let the line put you off — you could get lucky."

2:45 p.m. "They already cook for something like 750-800 guests a day, but the kitchen also prepares food for takeout, for apps like DoorDash, Uber Eats, and through their own website. They also recently brought [sister brand] Mr. Mandolin into their prep kitchen for takeout only. It's not a big space, which makes it even more incredible."

3:40 p.m. "Here's the evening crew having a briefing on the evening menu and specials. There were still customers sitting and eating, most notably one couple that stays six hours, from lunch through dinner. Everyone’s just as focused as in the day, and their personalities match each shift perfectly. I noticed a table of young guys in the corner, but they were just as sharp as everyone else, just as doting. They welcomed me in as one of theirs."

5:23 p.m. "During the day there's a shed with lanterns, and one person fills them up, and each server lights them up before placing them on tables. It immediately gives the space a different vibe from the daytime. It’s just beautiful."

6:02 p.m. "The place was packed again with the night crowd as the sun was going down. Within 30 minutes, it was full. Fewer families, more dates. People were very focused on the food, and asking more questions. Everyone had excitement and a smile on their face."

6:40 p.m. "There was a big holiday dinner that night. The outdoor section, it’s an intimate space, with the hanging lights. Here, it’s magical, but on the other side of that wall it’s incredibly busy."

8:19 p.m. "The cook preparing this stuffed tomato and pepper entree was very proud of this dish. She would layer the ingredients in the casseroles — it came from her hands to this plate. And she started preparing it at 9 in the morning."

11:20 p.m. "Sergio, one of the servers, was on his feet since 3 o'clock, and they still have guests in the dining room. But at staff meal, these guys eat as well as the customers. They would take turns taking down the dining room and work in shifts. Everyone went for the fries and protein. Everything is made with care and is plated and has an extra layer of love. The same plates, cutlery. There was no shortage of food, it’s there for everyone to eat."

11:47 p.m. "Claudius, one of the team's bussers, had been there since 8 in the morning, and he was stacking chairs after all the customers have gone home. Everyone’s happy that they made it. There’s a sense of relief and accomplishment."

12:00 a.m. "If nobody told you where this was, you could be back in Greece or Turkey. I went to the restaurant when they opened, and I’ve always wanted to take pictures at Mandolin. It was like coming back full circle for me, coming from Miami, to see how Little Haiti and the Design District has evolved, and how I’ve evolved in my life and my career as a photographer."
