Women do so much of the essential work in restaurants. And yet women struggle for recognition and visibility in so many parts of the hospitality industry. That’s not entirely the case in Philadelphia, though, where you’ll find women running the kitchen or the dining-room floor of many of the city’s best restaurants. That includes both those with a long track record — Vedge wouldn’t be Vedge without Kate Jacoby — and recent, lauded arrivals like Thanh Nguyen of Gabriella’s Vietnam.
