Chef Daniel Humm and restaurateur Will Guidara’s casually-elegant restaurant inside The NoMad Hotel is rooted in the same ethos that can be found at their critically acclaimed, three-Michelin-star restaurant, Eleven Madison Park. The NoMad’s menu is inspired by the chef’s time spent throughout Switzerland, California, and New York City — its signature dish is the whole-roasted chicken for two, which is stuffed with foie gras, black truffle, and brioche with pomme purée & baby leeks, and served bursting with a bouquet of fresh herbs. Other staples include an artful crudité served with chive cream; suckling pig confit with seckel pears, chicory, and pancetta; and milk & honey dessert with shortbread, brittle, and ice cream.
